CURRY, WHAT’S THIS ?

To unveil the history of the curry powder, here are some interesting facts.
Originally, the Tamil translation of the word « curry » literally means « a sauce for rice ».

The curry powder is not a single grounded spice, as some of us used to think, but a mixture of several spices. The basic composition of the curry powder includes curcuma, coridander, tumeric, cumin, fenugreek and chili pepper. Depending on the region and the recipy, are also added black pepper, ginger, garlic, cinnamon, clove, mustard seed, cardamom, etc.

The Northern Indian regions call the same mixture Massala or Garam Massala (from Tamil, massala means « mixture »).

The curry is good for the cancer prevention and helps to regulate the balance between the « bad » and the « good » cholesterol.

SERVINGS : 6
PREPARATION : 30 minutes
COOKING : 2h00

STAFF NEEDED :
(1) Stainer
(2) Casserole dish
(3) Saucepan
(4) Beater
& Your favorite book / any other occupation…

INGRIDIENTS :
(1) 1 chicken,
(2) 250 grams of rice,
(3) 1 onion,
(4) 2 carrots,
(5) 1 celery branch,
(6) 4 garlic cloves,
(7) 50 grams of butter,
(8) 1 egg yolk,
(9) fresh parsley,
(10) 15 grams of all-purpose wheat flour,
(11) 200 ml of fresh cream,
(12) 1 pinch of curry powder or as per your requirement,
(13) salt as per your requirement,
(14) pepper as per your requirement.

READY, STEADY, GO!

THE CHICKEN:
(1) I put the chicken in a large casserole, cover with water and add the peeled and sliced carrot, the celery cut in sections, the cut parsley and the garlic.
(2) I cook it all for 2 hours over low heat in a small broth.

THE PILAF RICE:
(1) I prepare the pilaf rice 20 min before the end of the chicken’s cooking. I sweat the chopped onion with butter in a saucepan, add the rice and let it become transparent while stirring.
(2) After that, I wet the rice with 2 glasses of hot water, add salt and pepper, cover and let 20 min over low heat.

THE CURRY SAUCE:
(1) In a small saucepan, I heat the remaining butter and wheat flour.
(2) Then, I stir butter and flour with a wooden spoon and gradually add the cooking broth of the filtered chicken.
(3) I Whip constantly, then, my sauce will thicken and become unctuous.
(4) I remove the sauce from the heat, add the egg yolk, the fresh cream while whisking, and curry.
(5) Serve the chicken cut, surrounded by rice and topped with sauce.
