Ok here it is!
Crust
Ingredients
- 2 sticks (1 cup) cold unsalted butter, diced
- 2 1/2 c all purpose flour
- 1/2 t salt
- 1/2 c ice cold water
Directions
- Combine the flour and salt, then cut in the butter by breaking it up with a pastry cutter or your hands.
- Add water little by little until you can form the dough into a ball.
- On a floured work surface, cut the dough in half.
- Roll out one half of the dough so it will fit into your pie dish, covering the bottom and sides of the dish.
- Roll the second half of the dough to the same size as the first, and cut it into strips if you'd like to make a lattice. (there are loads of lattice tutorials on the web, and I also did one a while back here
Apple filling!
Ingredients
- 7-10 apples, depending on their size, cored, peeled, and sliced. (Enough to fill the pie crust pretty deep.)
- juice of 2/3 a lemon
- 1/4 c brown sugar
- 3 T flour
- 2 T butter, diced
- 1T cinnamon
- 1/4 t each nutmeg, allspice, and ground cloves (if you like these, of course)
Directions
- Toss the apples in lemon juice, then add the rest of the ingredients and stir to coat the apples.
- Add the apples to the top of the bottom pie crust.
- Add your top pie crust
- Brush the top pie crust with a lighly beaten egg, OR take the awesome suggestion of @marxrab and add streusel on top (see her comment on this post).
- Bake at 400F for 15 minutes, then turn the oven to 350F and bake for another 45 minutes, or until the crust is browned and the apples are bubbling.
