Hi Steemit Friends!
Today I have a promised recipe for vegan carrot pancakes for you. If you're looking for an idea for a healthy seasonal lunch or dinner, try my recipe!
Health benefits of carrot:
- it's delicious both raw, in the form of juice, boiled or baked 😋
- the carrot leaves are also edible (I squeeze the juice out of it, you can also prepare pesto)
- we can make oil from carrot and from carrot seeds
- carrot is a source of beta carotene, which has a beneficial effect on the eyes, on the skin (preserves the tan and gives it a beautiful color) and increases the body's resistance
- regulates the functioning of the digestive tract and prevents constipation
- it reduces the risk of stroke and prevents coronary heart disease
- raw carrot reduces cholesterol
- boiled carrot prevent lung cancer carrot juice acts as an expectorant
Ingredients:
- 3 large carrots
- 1 cup of gluten free oatmeal
- 3 tablespoons of potato flour (starch)
- 1/2 cup of hot water
- 1 small onion
- 1 tablespoon of curry
- teaspoon of sweet pepper powder
- 1/2 teaspoon of hot pepper powder
- 1/2 teaspoon of Himalayan salt
- rafined coconut oil to frying
Preparation:
1. Shredding carrots with a grater. Cut the onions fine.
2. Put a grated carrot, oatmeal, potato flour, chopped onion and spices into a large bowl. Pour hot water, mix thoroughly and let stand for 15 minutes.
3. Heat the oil in a frying pan, place the pancakes with a spoon and fry on both sides in golden color.
Serve with rice, potatoes or e.g. millet, or with my sunflowers seeds sauce.

We don't have carrot season here but this recipe is worth trying as soon as carrot season will come in winter. Thanks again for one more amazing recipe.

Carrot is one of the vegetable of king like tomato but i love one single dice like Indian ( carrot halva ) if you don,t not about halva so please check on YOUTUBE

Carrots are by far my favorite vegetable, sometimes I have to pay attention on how much I eat them, since my skins starts to get a bit orange... 😅 Anyhow, this is perfect recipe for me, I'll have to bookmark this for later! 😋 Thanks for sharing this with us! 💙
@monika-homa do you not need a lot oil to fry these i think that i tried to do soimilar recipe, using grated zuchhini and it was still liquidy after i pured out of waetr and let it stand for a while and with other ingrediends, even frying on coconut oil it still felt that is not as healthy dish! what would you say? do you fry it just for 2-3 mins? x
