Today I present to you a dish that I made for my family. It's the traditional Carbonara, for example I do not use egg.
I started off with sautéing a small onion and roughly 2.5 cups of mushrooms in bacon grease, while simultaneously roasting garlic in the toaster oven
Next, I cup up some chicken that I had grilled on Saturday. I used all thigh meat. I also added about 2 cups of crispy bacon.
Then, I made the sauce. I started with 1.5 cups of half and half cream along with a table spoon of flour. I mixed those thoroughly until that began to thiken. I then added roughly 4 ounces of cream cheese. After that, I then added a asiago, parmesan and romano cheese mix from Trader Joe's.
After pureeing the mushrooms, onions and garlic, I added that mix in with the sauce. Once completely mixed in together, I added the sauce, and the chicken and bacon to the noodles. I chose to go with mini farfalle pasta. And there you have it, my version of Pasta Carbonara.
