Oh, it's super popular in my country - especially along the Gulf Coast where I live. In Louisiana the crayfish (pronounced and often spelled crawfish to the locals) is practically the state animal. Pictures of the things are on most of the advertising in Louisiana, even in advertising not related to food, I've just never seen/heard of it being ground. The most popular way to eat crayfish in this area - especially in a party / group setting is to boil them whole with Cajun spices and some small red potatoes and corn thrown in maybe some sausage or vegetables also. The part of the city I've recently moved to is a cultural mixing ground. There are quite a few Africa centric grocery stores to cater to the immigrant population of the area. I may have to stop by and look for it some day.

Wow. That's nice. I have never ate them whole. Just prefer to grind them and use it for my meals!
