That tajine is spectacular for cooking, especially for cooking slowly and that all the flavors are intermingled. Here we also use pressure cookers to soften the meat a bit and then we pass it to the clay pots. the photographs excellent pictures, @creativewoman

The same thing happened with me! In Morocco we cook it directly, because there have a soft meat 🥩.
