I think I invented the perfect Veggie Sweet and Sour recipe without using any additional sauce to make it sweet and sour 🌞
I sautaed nopal cactus, onion, carrott and tomatoes in a pan and added a little bit of water to it to avoid the veggies sticking to the pan. Finally I added very ripe plantain slices and pineapple to the veggies just to warm them up a little bit and served it over brown rice. It is soooooo yummy!!!😍😍 Nopal has a sour taste when it's cooked and pineapple + plantain gives it's perfect sweetness.
It is an extremely healthy, delicious, nutritious and fat-free meal. It definitely gives you enough energy for the entire day because of the carb and starch content of the plaintain and brown rice, and will satisfy your hunger.

Oh yes it is very appetising ang delicious :) And so quick and easy to make. I love these kind of melas, when I just mix everything I have in the kitchen and it turns out to be an awesome dish.

Thank you very much honey :) Really? There is no plantain in Cambodia? I didn't know that. Originally I'M from Hungary and we don't have it there either...
Nope.. kinda strange but it seems that the plantain hasn't come to SE-Asia yet! In Belgium we had them in the supermarkets but Cambodia is so rural that supermarkets are only to be found in the 2 big cities... no supermarkets where we live... local farmers and yummy pesticide-free food ;)
Well, everything has its advantages and disadvantages. I love local markets :) But sometimes, when you need more stuff, it's gteat to have a suoermarket closeby. It's so cool you live in Cambodia, by the way. I'm planning to travel in Asia next year :)

Well, to be honest, there is nothing like nopal cactus. I come from Hungary and we don't have it either... So I try to eat a lot while I'm in Mexico :D
