Friday was my first attempt at making homemade tabbouleh. I didn't have a recipe and I kept buying a shop bought one. Recently they seem to keep selling out now, so I decided to make my own.
Here are the ingredients I used:
200g bulgar wheat
4 large spring onions sliced
100g cucumber with centre removed
140g tomatoes deseeded and chopped
15g parsley
15g coriander
15g mint
12 mil garlic oil
14 mil lemon juice
80g crumbled feta
salt
pepper
I started off by washing the bulgar wheat and added it to 400mils of boiling water. I cooked this for 15 minutes until most of the water had gone and then drained off rest. I let this sit for 10 minutes.
In a bowl I added the cucumber, spring onions and tomatoes. Then I added the bulgar wheat and gave it a mix. Once mixed the finely chopped herbs went in and another mix was made. I added the garlic oil,. lemon juice, salt and pepper. Another mix was made. Finally I crumbled in the feta, gave one final mix and put it in the fridge until serving.
At first I didn't think there was much flavour at all and I was a little disappointed. Once the tabbouleh had a few hours to sit in the fridge, the magic happened. As I sat down to dinner I noticed everything has so much more flavour. It was fresh, zingy and so flavoursome, I was very proud of myself. My husband loved it too. He couldn't stop raving about it. He said it looked and tasted better than the shop bought one. We loved it so much that I decided to make it again today.
