Pizza Nachos - homemade and budget-friendly

Pizza Nachos

Thought I'd share a thoroughly tried & tested recipe I adapted from one I saw on Pinterest (or an amalgam of ones - I do like to explore a LOT). While I wouldn't say it was super budget-friendly, at least around here, it's pretty good, and if you can grow some of your own topping ingredients, then even better. Use fresh vegetables as I've tried using frozen ingredients and they just turn soggy. You want crispy-crunchy veg toppings.

Basically, the toppings you want to gather are adapted from what pizza garnishes you enjoy, but I keep ours pretty simple:

Toppings

  • capsicum (you can go for a rainbow effect by using multiple coloured peppers)
  • onion (using a red onion also makes the meal more visually interesting, but you can stick with a common white onion)
  • mincemeat (I use pork, and beef works fine but I'm not sure about other meat flavours - chicken would probably work well too)

Other topping suggestions might include chorizo, tomatoes, mushrooms, olives - anything that works well with the nacho spice flavour.

Other Ingredients

  • large bag of corn chips
  • sour cream
  • cheese
  • nacho flavouring (sachet)

Equipment

  • roasting pan (deep dish)
  • cheese grater
  • frypan
  • spoon, knife, etc

Instructions

  • Dice up the capsicum and the onion (don't cook, you'll be using them raw), separating the layers of onion as best you can; set aside
  • Tip out the bag of chips into the roasting pan, and spread out evenly; grate a layer of cheese over the chips, then set aside
  • Brown the mincemeat in the frypan; once cooked add the flavouring and a bit of water, allow to infuse and evaporate off most of the water (you want to be left with a soft mixture, not sloppy)
  • While you're waiting for the meat to finish cooking, turn the oven on to about 150 degrees C to warm up, and pop in the pan of chips; pull it out once the cheese has melted
  • Time to assemble the toppings: first evenly spread the meat over the chips; then the onion; then the capsicum; then add another decent layer of grated cheese
  • Pop back into the oven until the top layer of cheese has melted; pull out and serve, adding dollops of sour cream on top

This is a dish most fun eaten with your fingers. :D

In fact, if I remember my research correctly the concept of pizza nachos was invented for those very games, lol. :)

Cheese that isn't yours is often referred to as nacho cheese!

Grating the cheese may be a touch awkward - but then, you can buy it pre-grated so there's a solution for everything, lol ;)
