It feels a bit weird to write about a winterly kale salad that I put together a few weeks back in Germany, while now enjoying over 30 degrees Celsius in Kuala Lumpur surrounded by exotic fruits like mangosteen and jackfruit. Have you ever thought about the fact, that eating local and seasonal foods helps you to get exactly the nutrients that you need in your current location?
No wonder that the winter veggies like kale, parsnip or beetroot are especially great immune boosters for keeping you healthy in the cold and that juicy fruits like strawberries or watermelon are mostly just available in the summer months to give you the refreshing kick during the warm days.
Therefore I prefer to rely on the local fruits and veggies for my colorful meals - instead of kale and apple salad like last month, I now find bok choy and water spinach in my green dinner salad. Well, in case you are home in the Northern hemisphere, kale and apples might be exactly what you are munching on these days. Here is how you can deliciously fill up your body with these nutritious winter foods...
Creamy apple-ginger hummus
For the salad dressing, put the following ingredients into a high bowl and blend with your hand mixer until is becomes a homogenous, creamy hummus.
- 3 medium organic apples
- 2 tbsp cashew butter
- 1 tbsp nutritional yeast
- 1 thumb fresh ginger
- 1 small red onion
- 1/2 stalk celery
- Herbs of your choice
- A bit water
Normally, the sodium-rich celery adds a great salty flavor so that you can easily leave out any additional salt in here. Make sure that the cashew butter is not roasted and only contains cashews - to be creamy and flavorful no nut spread needs any sugar or oil in it.
Winterly, crunchy kale salad
For the salad mixture, chop the apples in small pieces or grate them if you prefer a finer texture. I always like bigger apple pieces for the certain crunch on my plate and the kale should be chopped quite finely so that it becomes a bit softer.
I once stumbled across a great advice for getting the seeds out of the pomegranate without your kitchen looking like a murder scene afterwards - I think I saw it in an Instagram story by @isshappy. Cut the pomegranate into two or three pieces and then put them into a bowl of water. Remove the seeds under the water so that they float peacefully in there until you drain them.
- 1 pomegranate
- 3 medium organic apples
- 5 big organic kale leaves
- 1 parsnip
- 1 tbsp grated walnuts
A little side benefit - if you shop local and seasonal produce instead of chasing all the exotic imported goods you are not only supporting your local famers but also avoid unnecessary environment pollution due to the long transport ways from overseas. Therefore you can not only do something amazing for your body, your community as well as mother earth are also profiting from your conscious buying decision.

That is one beautiful salad! I totally agree with you about shopping locally. I'm still not perfect, but the bulk of my budget goes to the farmers market! It just tastes so much better, too. We just grabbed our first pomegranate last week, but gobbled up those little gems so fast that it's time to get some more. I've come to really enjoy that seasonal option for fruit. :)
Every step makes a different. I am also not a hero when it comes to seasonal and local shopping. It is much easier here in South East Asia and I think only my avocados and some superfoods are from abroad but back in Germany for example I relied heavily on imported goods like bananas. A raw foodie like me just can’t easily eat apples and kale all day. 🙈
Couldn't agree more about seasonal eating @rawadventuress! I've had my fair share of four seasons in one week when I've travelled internationally. It takes the body and mind a while to adjust! This looks like a refreshing summer meal! I love kale salad with nuts and although I usually add cranberries, with our pomegranates half grown I'll be borrowing your recipe soon ;)

It was many years ago. In my early 20's I lived and worked overseas. At one point I went from warm winter on the Californian coast to a snow blizzard back home which was then Boston, and finally visiting back home in South Africa in the scorching above 40's summer heat
