Colorful Chicken Squash Soup @senseicat

This is a delicious and nutritious home made soup that will appeal to your palate.

Ingredients:
1 broiler/fryer chicken (4 pounds), cut up
13 cups water
5 pounds butternut squash, peeled and cubed (about 10 cups)
1-1/4 pounds fresh kale, chopped
6 medium carrots, chopped
2 large onions, chopped
3 teaspoons salt

Method:
Place chicken and water in a soup kettle. Bring to a boil. Reduce heat; cover and simmer for 1 hour or until chicken is tender.
Remove chicken from broth. Strain broth and skim fat. Return broth to the pan; add the squash, kale, carrots and onions. Bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until vegetables are tender.
When chicken is cool enough to handle, remove meat from bones and cut into bite-size pieces. Discard bones and skin. Add chicken and salt to soup; heat thorough.

Thank you so much for that compliment. The weather started to cool today and for me that always symbolizes soup. I am making a bok choy with shrimp one right now that is about to be sampled by my son as an after school treat.

Where are you that it's getting cool? I'm in northern Maine where it hadn't hit 60F here since last October, and then today, all of a sudden, wham! ...it hit 81F! (It hit an until-today spring high of 51F yesterday...lol...)
