Cranberry and Cream Cheese Muffins

Hi Friends!

The previous day, I slept well, I think. However last night, not really. I've been up since 1.25 AM. I had a weird dream. In my dream, my Aussie mum and youngest sis had MINI LION 😅 It woke me up! Most likely since the mini lion appeared from inside the toilet 🤣🤣🤣🤣 How, right??!! So I texted my mum as soon as I managed to grab the phone, around 1.50 AM, then browsed the net as I was wide awake. I forced myself to go back to sleep at 4 AM. By 6, I was up again and here I am 😆 Already done with breakfast making, packed school lunches, and fed the fur babies. Driving boys to school in an H from now. So yep, I have time to type down today's recipe share 😉

Before that though. Let's talk about the weather 🤣🤣🤣🤣 It's nice and sunny at the moment, so happy eventhough it's gonna be a long day as I have an appointment for new glasses prescription, dropping off donations to the thrift store, moving furnitures of my sons bedrooms and whatnot, then still house chores to do, plus gardening also on the list. How about you? Big plans today?

Anyhoo! For today's muffins, they are dried cranberry muffins. I love dried cranberries. I could eat the whole large bag myself, if only I didn't check the sugar content 😫 I just love them too much 😅

2 c flour
1/2 c sugar
1 tbso BP
A pinch of salt

2 eggs, beaten
1 c milk
6 tbsp oil
1/2 tbsp vanilla essence

1/3 c cream cheese chips
1/2 - 1 c dried sweetened cranberries

Mix flour, BP, salt, sugar in a bowl, make a well in center

Pour in milk, beaten eggs, oil, and essence, stir to just combine while adding dried cranberries and cream cheese chips

Pour batter onto greased muffin pan, and bake for 18-20 minutes, on preheated 400 F

Take out of pan immediately and cool on rack

The biggest mistake is to grab the phone in the middle of the night :) Whenever I do that I am wide awake for another 2 hours. Unless I listen to an audiobook to fall asleep again. These muffins look very delicious. Thank you for sharing!

Oh, I actually never really sleep throughout the night. Been a problem since late 90s when I was still in uni 😅 Then I worked night shifts, too 😅

Lately tho, I was on allergies medications. Really wrecked thr sleeping pattern even more, somehow.

The other night was the 1st night I could sleep well, then the following night, it was back, waking up and wide awake around 1-2 AM 😅

When the dream woke me up, I just started reading a book (cough, I mean comic book 🤣), then by 1.50 I went to my husband's side where my phone was charged, so I just texted my Mum and then started browsing around instead back to my comic book 🤣

I had the same problem but started taking Melatonin. It is a safe vitamin that helps you sleep better. You can research it and maybe try it if you like. I used to take sleeping pills in the past but they dont work for me anymore lol I think my mind is overactive and always bringing up stories that even sleeping pills cant control it anymore 🤣 I am just trying to sleep on time and wake up on time, yet it is a hard mission!

I do take melatonin sometimes 😁
