Hi my dear friends on steemit! How is your day going? What about some pancakes today?
I love to eat my pancakes with coconut nectar or chocolate and today I added a lot of coconut butter to my pancake stack, honestly a little to much this time, but it was great anyway!ππ
They turned out very fluffy, I think that was the best think with these pancakes!
Some days I make some pancakes for myself, because I love to make my breakfast to something extraordinary and with pancakes I always succeed. I then eat them for lunch or snack, because I most of the time make way to many of them.
Here is my easy delicious pancake recipe that I want to share with you my darlings today! Take note or bookmark (or resteem) and try them out soon!ππ
Recipe
This recipe makes a whole bunch of pancakes so be sure you have some people to enjoy them with!
INGREDIENTS
- 3/4 cup gluten free flour mix of choice (+more when needed)
- 1/4 cup coconut flour
- 1 tsp baking powder
- 1 tsp apple vinegar
- 1 cup aquafaba (the liquid of canned or cooked chickpeas) here how to make your own
1/2 cup oat milk or any other no-dairy milk
Optional: 1 tbsp coconut nectar
METHOD
- Simply mix all the ingredients together (first the dry and than add the liquid, add the baking powder and apple vinegar in a separate bowl for a few minutes to react with each other before adding it to the pancake batter.)
- Let it set for 10 minutes. When needed add more flour or liquid.
- Heat a non stick pan and add a little virgin coconut oil.
- Heat on a medium level.
- Add one or two tbsp pancake batter to the pan.
- Cook until you can see bubbles on the surface and than flip to the other side.
- Serve with your favourite toppings and fruits or berries. I added some coconut butter, coconut nectar, pomegranate, coconut chips to my pancakes this time.
- Enjoy with good company!π

Why 1 tsp of apple vinegar is needed? To give a vinegary flavour or for another purpose?
How many more pancakes you can stack on top but the whole stack won't collapse? :-D
Haha and I normaly stack about 10 pancakes on each other, but I think I could manage 20 or 30;) Haha!!
The apple vinegar together with the baking powder makes the pancakes softer and fluffy!;) You wont taste the apple vinegar in the end;)

Love a pancake, usually I make a crepe type but the thick American style are great too, I guess there is no bad pancake LOL

What kind of flour would you recommend? Since we don't have gluten-free pancake mix where I live. Almond flour maybe? Thanks
I would recomment almond flour or buckwheat flour. Or make your own mixture with buckwheat, almond and sunflower flour. But I really like almond flour;)

That sounds awesome. I am defiantly going to give them a try. I recently picked up a waffle maker so I am wondering if this batter could be poured into it. I don't see why not.
Yeaa give it a try and let me know if it worked out for you. I feel sad I dont have a waffle maker as I really love waffles and would make them every day (almost) if I could!;)
It's a dangerous thing to have. I cooked about 12 waffles the first day I had the cooker. Definitely an item I would pickup.

Almond flour I guess! Thats so great and also sweet in taste;) And yours?
I've tried almond milk but never tried almond flour. So curious about how it will turn out as a substitute for normal flour.

Yeaa did you find almond flour in the supermarket? You could also just blend almonds until you have flour if you cant find it!;)

they look so fluffy and delicious oh my goodness. I have to try gluten free staff I differently suck at it. And I have to admit that I'm addicted to gluten.
I will try to give this a try, I cannot find gluten free mix here, do you know how I can make my own?
Yea you can simply blend almonds , sunflower seeds, buckwheat, or shredded coconut until you have a fine flour. Or use spelt flour instead of the gluten free flour mix;) I do that also sometimes. Thanks love for your sweet comment and support! Wish you a great weekend!
I do love a good stack of pancakes! I still haven't tried using aquafaba. I rarely use canned chickpeas since I make them from dried in big batches and then freeze. I need to try to remember to save some of the water next time I make them!
