At some point I came across a book by Daan de Wit. The book's in Dutch, so not really recommendable which is a shame, unless you speak Dutch :). Anyways, in his book he debunks some of the mainstream ideas about food. And he uses a huge database of research to do so, even shows the sequence in which studies have been done, what info made it to the public and what didn't and how lobby industries were involved and all. For me at the time, his story about cholesterol and fats was most surprising. One of his sentences which stuck was that the idea we grow fat when we eat fat is as ridiculous as thinking we'll grow green when we eat green vegetables, lol. Sounded plausible enough ;). Anyways, he does a great job showing how carbs and peaks in blood sugar are at the source of so many of our physical problems, including being susceptible to infections and also for example, the health of our teeth.

The way he put it together was so convincing to me, I actually did change my diet. I eat a lot more omega 3 fatty foods now, after understanding that too much of omega 6 is also a problem. And hardly any carbs, and way more veggies. The main thing that changed was that I started thinking of carbs (bread, potatoes, pastas etc) as not being healthy, understanding they cause those peaks in the blood sugar and are a real problem. Now that I know how I can prevent those peaks by making smart choices in what I eat, and eating more of the fatty foods, I do feel my body feels more saturated and fulfilled by this new way of eating. And energy after meals is more consistent and lasts longer. So good point, thanks for bringing it up here. It's definitely important knowledge to share!!
