Just looked it up, it looks like it's a good practice to soak nuts and seeds to reduce the amount of phytic acid they carry. Apparently phytic acid is necessary for the plant to protect the nut or seed, but when it comes time for human consumption, this acid acts as an enzyme inhibitor and interferes with the body's ability to absorb nutrients. Yeah! Phytic acid, that is what it was called :) Nice! I tend to always soak at least pumpkin seeds and then make different 'spreads' out of them. In Denmark we eat a lot of 'rugbrød' (dark sourdough ryebread) and 'smørrebrød' (openfaced sandwiches). And since danes love fish, eggs, meat, mayo, cream etc on those sandwiches, so as a plant eater, I have to get creative :)
