Thanks for the comment. I love kimchi too and if there were a good place in my city I'd probably buy it too. One great thing about making it yourself is you can control the amount of salt used.

So delicious, right? 🤗 I made sauerkraut myself once and loved all about it - the batch lasted me 10 days and it added such a great twist to all my salads.

But have to say that the preparation was quite time and energy consuming since you first have to massage the cabbage properly to make it softer. But with your recipe for the juice only, it seems like that is not necessary at all, am I right?

Hi RawAdventuress, thanks for reaching out. There are so many different ways to make kraut. I find if I run the vegetables through a food processor it does a much better job at getting the leaves finely cut so the massage time is lessened and a lot easier. For the kraut juice, I agree it's less work. You have a lovely blog and thanks again for the comment.

The process looks interesting. I noticed that you didn't add a starter. How does one assure that they are getting good probiotics?

It seems that the stuff growing in the cabbage or on one's hands could be anything.

Random things make me nervous.
