Rice pudding is a very tasty creamy homemade dessert, and although it doesn't look like it is quite simple to make, I like to eat it hot and with plenty of liquid, but it can also be eaten cold, its flavour is exquisite and every time I make it it is finished quickly, today I wanted to make this dessert at home and I show you how I did it.
The technique I use is to follow three procedures, first the rice is cooked with water, then hot milk is added to the rice, and finally condensed milk is added to the rice.
- One litre of liquid milk
- Two cups of water
- One cup of white rice
- One cup of sugar
- Half a cup of condensed milk
- Cinnamon stick and powdered cinnamon
- Raisins, optional
- One tablespoon of vanilla
We start cooking the rice in a pot with two cups of water, add the cinnamon stick, the cooker should be on medium heat.
At the same time in another pot we add the milk, sugar, vanilla, put over medium heat, it must be kept hot, it doesn't matter if it starts to boil, if it starts to boil, turn off the cooker.
When our rice is completely and its grain is soft add the liquid mixture of hot milk (milk, sugar, vanilla) and stir,
We must not move away from the fire, we must constantly move the rice so that it does not stick to the pot.
Cook over low heat while stirring until the rice grains are soft, and should be quite liquid so that when you turn it off it continues to cook, when we are about to turn off our rice add the half cup of condensed milk, mix well for five minutes more, and you can turn off the cooker.
Remove the cinnamon stick, it can be served hot or cold, decorate with cinnamon powder,
You can add sultanas, chocolate or coconut pieces, I put some lemon leaves, the citrus aroma goes well with this delicious dessert.
This recipe is to make a fairly sweet rice pudding, if you don't like it to be cloyingly sweet then instead of one cup of sugar use half this amount.

ARROZ CON LECHE
El arroz con leche es un postre casero cremoso muy sabroso, y aunque no parece es bastante sencillo de hacer, a mi me gusta comerlo caliente y con bastante líquido, pero también se puede comer frío, su sabor es exquisito y cada vez que hago se acaba rápido, hoy se me antojo hacer este postre en casas y les muestro como lo hice.
La técnica que yo utilizo es cumplir con tres procedimientos, primero se cocina el arroz con agua, segundo se le añade al arroz leche caliente, y por último se le coloca al arroz leche condensada
- Un litro de leche líquida
- Dos tazas de agua
- Una taza de arroz blanco
- Una taza de azúcar
- Media taza de leche condensada
- Canela en rama y en polvo
- Pasitas, opcional
- Una cucharada de vainilla
Comenzamos cociendo el arroz en una olla con las dos tazas de agua, se le coloca la rama de canela, la estufa debe estar a fuego medio
Al mismo tiempo en otra olla unimos la leche, azúcar, vainilla, poner a fuego medio, debe mantenerse caliente, no importa si empieza a hervir, en el caso de que hierba se apaga la estufa.
Cuando nuestro arroz esté completamente y su grano esté blando agregamos la mezcla líquida de leche caliente (leche, azúcar, vainilla) y movemos,
No debemos apartarnos del fuego, tenemos que mover constantemente el arroz para que no se pegue de la olla.
Cocinar a fuego lento sin dejar de mover hasta que los granos de arroz estén suaves, y debe de quedar bastante líquido para que al apagarlo continúa cociéndose, cuando ya estemos a punto de apagar nuestro arroz agregamos la media taza de leche condensada, mezclamos muy bien por cinco minutos más, y ya se puede apagar la estufa.
Retirar la rama de canela, se puede servir caliente o frío, decorar con canela en polvo,
Puedes añadir pasas, chocolate o trozos de coco, yo le coloque unas hojas de limón, el aroma cítrico le va bien a este delicioso postre.
Esta receta es para hacer un arroz con leche bastante dulce, si no te gusta que quede empalagoso entonces en vez de una taza de azúcar se utiliza la mitad de esta cantidad.

Rice pudding is so simple and delicious. Question for you: when you cook your rice, do you wash it first?
I only wash the rice once, I didn't do that before,
I see that many people wash the rice and rinse it until the water runs clear, I still can't do it that way, there are also special cases where I don't wash it, for example when I'm going to cook a very popular food here which is similar to risotto, in this case I don't wash the rice because the food must be creamy.
