HEALTHY BRUNCH IS SERVED

in Silver Bloggers2 months ago

Hello to all you smart, sassy, #silverbloggers from around the globe.

When I woke up this morning, I was hungry. I laid in bed thinking what I could make that was different from my usual breakfast of fruit and cereal or toast and eggs, I do love eggs, then I thought it's cold outside and I do love hot soup on a cold day. Why not combine those two.

Can you guess what I made?

EGG DROP SOUP

This was my first try at this Chinese food favorite of mine. I have ordered it for take-out many times, I love the stuff, but I have never tried to make my own.

I combed through some different internet recipes, boy oh boyo, there were tons of different combos out there to choose from but I am not one to follow exact recipes so I picked spices and methods that I thought I would enjoy.

I had in mind the health benefits of what spices I could use to enhance not only the flavor but also the nutritional value.

Turmeric and ginger made the list, as they help digestion and inflammation, garlic as usual, was thrown into the pot. Not only do I love the taste of garlic, but it's also great for your heart and cholesterol levels.

Most egg drop soups don't include carrots, corn or green onion, the onion maybe as garnish, but I tossed them into a little avocado oil and sautéed them to soften them before adding them to the broth.

I used low sodium chicken broth as the base, I added in all the veggies.

Next, I added a cornstarch slurry to thicken the broth.

Now the challenge, dropping in the egg batter. You have to go slow, allowing the egg to stream into the soup as you continue to swirl the soup in one direction, this allows the egg to form ribbons in the soup. A dash of soy sauce and the soup is ready to serve.

To add a little more fun and nutrition, I made sourdough avocado toast.

YUM!!!

Robin is a genius, I'd never have thought to serve breakfast eggs like that, perfect for a winter breakfast!

Now I need someone who chow down on whatever is prepared....
!LUV to you and Robin

my go-to line is "you make it I'll eat it."

You spilled the beans already making loaves of bread, every guy must know how to cook....

When good lady not feeling up to it, quicker to go prepare or starve! 🙃 yup 'I make it you make it you eat it, you make it you eat it too!"

Hi there, yep, the soul hit the spot, great on a cold winter day.

I made avocado and scrambled egg toast yesterday in the first time for fluffing ages.

It looks splendidly delicious and tasty, fun fact I have heard people call egg drop soup as egg flower soup.

It is great to see you back posting :)

Hello, my friend @joanstewart. Nice to hear from you, hope you are well.

I tend to cook more often in the cold months, gives me something to do while being pinned inside. It's been such a brutally cold winter here. Bob will eat anything I make, and he's even been helping "chop" for me and clean up! I try to keep in mind the health benefits of food as well as the calories, we don't get as much exercise as we do in the warm months.

Have a lovely day.

Living in our province I have learned to love spices, often able to get fresh turmeric, ginger, plus extras many may not use or combine together. Love experimenting with flavours!

Sorry to hear you having a rough winter, feeling the heat here don't venture out in midday sun. Washing on the line before the sun beats down.

Having Bob assisting is great that was my younger son who cooks delicious meals today, always watched, learning when young. My Dad was amazing in the kitchen, where I learned, no such thing as men not being in the kitchen... Sending love and so nice to hear from you.

Great to hear from you also. Trying new spices and flavors is right in my wheelhouse.

Keeps life flavourful, my sister has a fetish toward colour, mine is all about what one gets from spices and herbs. What ever keeps us ticking joyfully over, have a great day!
