Now that I prepared this easy cajun shrimp meal one time I'm going to try keeping a supply of frozen chopped vegetables on hand to make it again in a pinch, especially during Lent for our meatless Fridays! โ„๐Ÿฆ๐Ÿ‘ฉโ€๐Ÿณ๐Ÿฝ

Preparing a little helps on the day, not sure what you allowed during Lent. Many times I have excess vegetables I fry up onion, add the veg till warm, then pop an egg or two on top with a lid to cook through, once eggs are done, quick delicious meal. You could add cheese if allowed or flaked fish anything that cooks quickly under the lid or melts. ๐Ÿ˜„Spice to taste!
