Wednesday's Dinner Menu:
SPICY CAJUN SHRIMP & VEGETABLES

After Tuesday's wild temperature drop from an unseasonably pleasant 61Β°F to a downright bone chilling 16Β°F, followed by rain turning into ice then snow on Wednesday I was craving something with heat to warm me up from the inside.
I cook because I'm hungry so I don't mind saying I use time saving shortcuts whenever I'm preparing food. Nobody wants to spend hours cooking. Especially not me!
I remembered I put away diced peppers, onions, corn and red beans in the freezer that were leftover "scraps" from previous meals. Perfect ingredients to use to make my spicy cajun shrimp entree!
Best part is by using the precut and diced ingredients the total preparation time was less than 15 minutes!

Ingredients: Argentine red shrimp (wild caught), diced red and green bell peppers, red beans, onions, and sweet corn.
Seasoning is a blend I make by mixing cajun spices, cayenne, paprika, salt, black and red pepper, cumin, garlic salt, and sugar.
Preheat 2-3 tablespoons of oil of your choice in a wok or skillet. For this meal I use PRESSO by Spectrum Culinary SautΓ© Away! SAFFLOWER & AVOCADO OIL
Once heated, I add the frozen leftover ingredients and the shrimp, stirring frequently to break up the pieces.
Heat thoroughly while being careful not to overcook it or the shrimp will taste like rubber!
Last Step
Cover everything with a good coating of the spicy cajun seasoning blend.
I like a lot of intensity so I use a generous amount!

I had fresh jalapeno peppers and an avocado that I sliced up, scopped out and served along with the spicy cajun shrimp and vegetables to add a little color and different textures to the plating! In addition to tasting delicious my dinner was loaded with nutritional proteins, vitamins and fiber!

That looks delicious and for a quick pick me something spicy, it's a winner for me! There is something about Cajun food that reels me in. I couldn't get enough of it when I was there for three months.

One seafood lover to another, I know where your heart is when it comes to dinner! Any seafood prepared Cajun style is a solid win-win in my
bookstomach.You're fortunate to have a steady supply of fresh crab and other seafood that you could substitute for the shrimp in the recipe. Not wanting to cook? No problem! The Maryland/DC area still has a wide selection of restaurants that serve Cajun food, right? I can come up with three in the St. Louis vicinity, each location has a favorite go-to entree.

There are plenty of Cajun Restaurants that have great food, but, you just can top NOLO! This area has a wide selection of most things. Too many selections make the job more difficult. At the Shore House (Eastern Shore of Virginia/Maryland/Delaware, the house is close enough to be able to run over and drop a trap or a line in the Chesapeake. By the same token, with just a couple of minutes difference, you can be swimming in the Atlantic! It is the most perfect foil for living so close to traffic all the time. :)

Spicy and nice, quick and easy, always keep excess food, never waste it is not necessary. Shows what you can do in under 15 minutes a wholesome meal that looks good!

Now that I prepared this easy cajun shrimp meal one time I'm going to try keeping a supply of frozen chopped vegetables on hand to make it again in a pinch, especially during Lent for our meatless Fridays! βπ¦π©βπ³π½

Preparing a little helps on the day, not sure what you allowed during Lent. Many times I have excess vegetables I fry up onion, add the veg till warm, then pop an egg or two on top with a lid to cook through, once eggs are done, quick delicious meal. You could add cheese if allowed or flaked fish anything that cooks quickly under the lid or melts. πSpice to taste!

I never had any Cajun food before. However, this dish looks so delicious and so quick to prepare, love how the food is simple yet it has a lot of spices mixed into it. Also I love the way you plate the food :D
I loved peppers and like to add it to my dishes. But being imported, it is very expensive in Sarawak.
