I was thrilled when someone who works for me presented me with these little babies. She had grown them and wasn't sure what to do with them. Her 9 or 10-year old daughter echoed her thoughts:
Fiona will...
We love them and, among other things, they are a non-negotiable component of The Husband's famous Sunday brunch.
Last night's meatfree Monday supper was a spiced coconut lentil and spinach Dahl served on slices of brinjal and with fragrant rice.
The spinach, with the coconut milk, stirred in at the end, gives the Dahl a whole new dimension.
Because the brinjals were so little, I cut them lengthwise and, for effect, left the stalk.
I promised to share, and so I shall. This has been added to my ever growing list of recipes to share.
They will happen. Eventually. Things are a little busy in RL at the moment. In a good way...
Until next time, be well
Fiona

- Twice a year Traci York hosts a challenge to bloggers to post daily for a month. I've participated (or tried) for three years I've known her via the blockchain. Twice I've succeeded. It's that time of the year again, and I'm giving it a go - on the Hive blockchain. Wordpress bloggers are also invited to participate.

- If this post might seem familiar, it's because I'm doing two things:
- re-vamping old recipes. As I do this, I plan to add them in a file format that you can download and print. If you download recipes, buy me a coffee. Or better yet, a glass of wine....?
- and "re-capturing" nearly two years' worth of posts.
- I blog to the Hive blockchain using a number of decentralised appplications. From Wordpress, I use the Exxp Wordpress plugin. If this rocks your socks, click on the image below to sign up -

I'm a huge fan of eggplants - I've even had white ones this year. Been frying then finishing with honey and tamarind - omg. So good.
Me, too. That sounds equally yum. Tomorrow, as an antipasti I'm going to do them with a lime, chilli and yogurt dressing....on a bed of leaves.
beautiful, you should try the romanian salate de vinete/ eggplant salad, you roast them over the bbq or in the oven till they look all burnt, then you let them sit in a pot for a bit because after they will be much easier to peel, after that you mash them (make sure to not use any metal kittchen tools) mix it with a bit of mayo fine sliced garlic and a bit of onion et voila perfekt to put on bread!
That sounds very delicious! I have a similar pate recipe somewhere that includes garlic, mayo and cottage cheese but no onion. Oh, and fresh oreganum. I confess that I'm not a fan of baba ganoush. I will give this a go.
It's definetly different from baba ganoush, if you want a smoked flavor bake the eggplants over open fire, if you wanna dig deeper its called salata de vinete you will find many delicious recipes online :)
Google is my go-to! Will check that out, thank you.
