Satay sauce has to be one of my favourite things on the planet, satay skewers, satay tofu, gado gado and any noodle salad filled with freshly chopped veggies.
We don't often purchase meat replacements, I'm not a fan of the texture of meat so to buy something that replicates the texture doesn't make sense. But sometimes we experiment with different fakery and mince never really had any texture anyway so we purchased this 'Grillers Mince' from one of the big supermarkets here in Australia.
I'm not quite sure how you would 'grill' mince in either the American barbecue version of 'grill' or bake under a hot element in the Australian and English version of 'grill' (broil). Surely you would need to form it into a patty.
Anyway, aside from the name, we wanted mince anyway to make a kind of larb without the lettuce cups. So just cooked it simply with some chilli, sesame seeds, oils and soy sauce.
Then combined it with a bunch of chopped up vegetables from the farmers market and some rice noodles
I was inspired by the WagaMama cook book (oh how I miss WagaMama from the UK, we did find one in Australia but then they went into liquidation) where they use tomato sauce aka ketchup as a sweet element in a sauce. So I used tomato sauce, lemon juice, soy sauce and peanut butter with a bit more sesame oil and seasoned to make a good satay sauce. And the grillers mince gets a thumbs up too.
I love gado gado satay sauce too! My favourite is sriarcha, maple syrup, peanut butter and tamari - so easy, and the maple syrup really adds another sweet dimension to the sharpness of sriarcha. So good!
I didn't know Wagamama went into liquidation...
I made a tempeh larb the other day - so good!
