With the arrival of the Christmas holidays, we keep ourselves light at the table, in anticipation of the big binges. Here is a beautiful ratatouille is all there. I make it very simple, it's not the one from Provence, also because I bake it in the oven, and I don't use peppers, because they don't like them at home, but I use potatoes, and oregano, preferred to thyme.

Ingredienti per 4 persone: 2 zucchine, 2 melanzane lunghe, 3 pomodori San Marzano, 2 patate, sale, olio, origano, cipolla qb.

Wash the vegetables, peel the potatoes and slice everything into very thin slices. I don't use the mandolin, but I cut them with a knife. In a tureen, season each type of sliced vegetable individually, with salt, oil and oregano. In a wheel, add a drizzle of oil and a few pieces of onion. Arrange in a circle, alternating a slice of each vegetable, forming a snake, until the ingredients are finished. Sprinkle with more oregano and a drizzle of oil and bake at 200 degrees in a ventilated oven for 30/35 minutes.
