Glad you like eggplant - not a lot of people do but it is SOOO versatile and abundant & nutritious. Especially in Asia.
Not sure about the ASEAN plantbased challenge - I've lived in ASEAN for 18 years but for some reason my content and that of several others is routinely sidestepped/ignored and it's always the same-same old few, so I'm not stressing and definitely not making it a priority.

Carrot cake is the biz right? I'm a devotee too and was thinking to make one this week! Something about those rich pumpkin spice falvours, whoesome incredients and GREAT frosting... LOL... is definitely an art form!!
