I want to introduce you to Chicha. It is a traditional sweet drink. There are several versions of this drink. Some are even made with roots like casava, sweet potatoes and others. However, the most common ones are made of rice or pasta. I tend not to like the latter one as it is hard to make it right. Sometimes it ends up tasting like a savory drink. Also, pasta chicha tends to have a lot of added things like chocolate and other toppings that are meant to disguise bad flavors.
Anyways, this drink is made in a similar way to arroz con leche. Except that things keep on the fire until rice becomes one with milk. Others, tend to get the preparation to the blender. This changes the texture. One thing it has to be kept for chicha to be its thing is that it has to be thick. Toppings for the traditional preparation are two, cinnamon and sweetened condensed milk. That's it! Anything else your throw on the mix changes the flavor too much. Then, you could end up having a sort of rice milkshake.
The first time I had a cup of this drink it was during a trip to the Municipal Market with my grandparents. There used to be a guy who made chicha there. He was quite famous. There's even a song about him. He's name was Antonio. There was another famous guy in the way back to my grandparents' house, people called him Yeyo. There have been many places where people prepare good chicha. But every time I have a sip of a good preparation, it always throws me back to the morning in the market. We had just stop at grandpa's favorite place, the food court. Chicharrones, chicha and other things were sold there. He handed me a cup with something white with some cinnamon and condensed milk on top. I had a sip and it was love.
Grandpa isn't around anymore, but whenever I have the chance to get a cup of chicha, I always remember him. It happens a lot with the other things he liked to eat and drink. But chicha is special. Nowadays, I have a friend who makes some amazing chicha and I go there when I want to treat myself and remember grandpa at the same time.
And I know for a fact, grandpa would have loved this chicha.
