There's nothing like cooking up on the barbecue in the middle of summer. I often buy prepared chicken kabobs and throw them on the bbq for a nice quick meal. This time I decided to make my own.
Rummaging through the drawer I found some nice wooden skewers and the metal type. What shall I do? I ended up picking the metal ones as I haven't used them in some time.
First we will cut up that chicken breast into nice chunks to fit the skewer.
Some Spanish onion
Cut up into large pieces yet again
Don't forget that green pepper either
Prep is all done and now it's time for the rub.
All mixed together
Adding a sprinkling of olive oil for that sticky texture so it clings to the chicken
All applied and ready to set aside. Smells great!
Let's get those metal skewers out. Am I a surgeon or a mortician who knows. All the tools are ready
Time to skewer all this food. Chicken, onion, green pepper or whatever order you wish. Try to keep some spacing so the heat can reach everything.
Looking outside I'm wondering if I'm going to be rained out. Looks ominous but we'll soldier forward.
Time to prep the grill. Scrub it off and preheat.
Once we're up to temp add some oil to that grill. Smooth as a baby's bottom is the ultimate goal.
Bam, throw those skewers on the grill and close the lid. Letting them sit around 5 minutes.
5 minutes has passed open up that grill and flip them
After another 5 minutes of eternity your kabobs are done. Temperature read 165F on the chicken so we are done!
Congratulations you made it to the end. You can baste these finished beauties in a little bbq sauce or eat them as is. Lots of flavor either way.
I served this with a side of baked potato and would make again.
Those metal skewers got pretty hot so I ended up using some paper towel for a little insulation against the heat. These grills can become pretty dirty on the edges and they were dirtying up anything I brought near it. Paper towel seemed to do the trick for me when needing to handle those hot skewers.

Oh yeah!!! Those look great. I always check mine with a temp probe. I take a lot of goofing for doing it, but I like to be certain. I also do it in bad with indoors using the broiler. From raw to sizzling done in 20 minutes.
I've been meaning to look into those probes, they've come a long way recently. Lots of apps and wireless devices to make your life easier. Sure beats lifting the lid and temping all the time 😃
