Oh yeah!!! Those look great. I always check mine with a temp probe. I take a lot of goofing for doing it, but I like to be certain. I also do it in bad with indoors using the broiler. From raw to sizzling done in 20 minutes.

I've been meaning to look into those probes, they've come a long way recently. Lots of apps and wireless devices to make your life easier. Sure beats lifting the lid and temping all the time 😃
