Discusiones y dolores de cabeza fue lo que conseguí llevando a cabo este platillo, y no precisamente porque quedará feo, al contrario, logrando que saliera bien.
Fue uno de los momentos en los que mis compañeros y yo tuvimos más presión dentro de la cocina, puesto que todo tenía que estar listo a las 11am, nos movimos de la manera más rápida para obtener este resultado:
Discussions and headaches were what I managed to get out of this dish, and not exactly because it will be ugly, on the contrary, I managed to make it turn out well.
It was one of the moments in which my colleagues and I had the most pressure inside the kitchen, since everything had to be ready at 11am, we moved in the fastest way to get this result:
El pabellón criollo es un plato típico de Venezuela, compuesto por arroz, caraota, carne desmechada, tajadas y huevo frito, quien lo ha probado sabe que es una verdadera delicia.
The pabellon criollo is a typical Venezuelan dish, composed of rice, caraota, shredded meat, slices and fried egg, who has tried it knows that it is a real delicacy.
Cada cocina trabaja de manera diferente y suele dar un toque extra a los platillos, en nuestro caso, acompañamos este pabellón gourmet con unos toques de una reducción de mora y una de las salsas madres, por preferencia de nosotros, la velouté, para la que utilizamos el agua de la carne que anteriormente se cocinó y fue lo que le dio color, vida y un increíble sabor a nuestro plato.
In our case, we accompanied this gourmet pavilion with a few touches of blackberry reduction and one of our mother sauces, by preference, velouté, for which we used the water from the meat that was previously cooked and which gave color, life and an incredible flavor to our dish.
A parte de esto, trabajamos unas fresas con crema, típicas de esta región andina, su sabor y presentación fue maravillosa, y los comensales de este día quedaron bastante satisfechos.
Apart from this, we worked with some strawberries with cream, typical of this Andean region, its flavor and presentation was wonderful, and the diners of this day were quite satisfied.
Sin importar el estrés y la presión que tuvimos de todos contra todos, este día estuvimos muy contentos con los resultados, siempre es un buen momento para aprender y apoyarnos, fue una de las mejores experiencias dentro de este primer semestre.
Regardless of the stress and pressure we had to deal with, this day we were very happy with the results, it is always a good time to learn and support each other, it was one of the best experiences in this first semester.
A pesar de que siempre intento explicar las recetas, en este post no lo haré, pero aun así espero sea del agrado de todos... Saludos a los amantes de la gastronomía.
