Long time no recipe...haha
You know I love to make my meals myself and lately, I’ve been loving topical fruits like coconuts.
So today, I’m showing you how to make coconut rice 😊
Ingredients;
2 cups of Rice
1 big coconut
Vegetable oil
Chopped onions
I clove of garlic
Diced fresh tomatoes
Habanero peppers
Chopped bell peppers
Fish or/and any Choice of protein
Carrots
Dried Prawns
Mushrooms
Bay leaves
Sweet corn
Spices
Method;
First things first, prepare and set aside your ingredients, these helps cooking with ease.
Cook the rice for about 10 minutes, wash and set aside
Next, in a pan or pot, heat choice of oil and fry the onions
Add in the garlic and bell peppers and fry together
Add in the chopped tomatoes and blended habanero peppers, stir continuously.
Add in some soy sauce and sesame oil (optional)
Add the spices (chicken cubes, thyme, curry powder, blended crayfish)
Gradually Add in the washed per boiled rice, and stir together.
Add the coconut milk and a little water.
At 2 bay leaves and let cook for about 5 minutes.
Add sweet corn and Leave to cook till rice is done.
