Hollllyyy Mother!
This was one of the most succulent burgers I have done... A mix between a dish I have tried on M3 in Portugal and a burger. Specially done for Mother's day... my wife deserves it! And I π
Oviously started with... π₯©
Hand seasoned meat patty, with some bacon... Then use the fat from that cook into turning some garlic and onion into a caramelized point, joined by mushrooms, until they get soft enough. Then raise the fire and join some white wine, leave it for a couple of minutes for it to be absorbed, and then join some cream. Season at your taste and let it reduce for a bit.
Sideways, while the reduction happens, use another pan to fry an egg. Then build your burger!
Mine was...
First the bun, then the bacon, then a bit of the mushrooms sauce (with some mushrooms, but not many), then the meat patty, then the rest of the mushrooms and sauce, then the fried egg. Then add the top bun sideways... for the photo!
Once photos are done... squish on the top of that egg... and...

Could not use the hands I agree... but it was an interesting experiment. Next time will try to make less sauce and use the mushrooms as building bones for the sauce.

What is the mushrooms sauce made of? My mother used to add flour, I liked it like that but now I am intolerant to gluten. So I add Curcuma, fresh garlic, and basilic to it.

Mushrooms are white buttons, no flour on this one. Just forgot to mention that the way I do the sauce also has a little butter (beginning), but its they way you cook them that make them create that thick sauce.
Depending on the consistency you can let them reduce a bit more. My wife likes them a bit liquid like this... but I actually like them super thick.
I like them super think also. That's why I fry them without any oil sometimes.
Forest mushrooms are the ones that I love most.

Most of the forest mushroms like to grow near trees, most of the time under the leaves.
