Happy afternoon dear Hive community, I want to share with you these delicious but above all nutritious eggplant sandwiches, motivated by an increase in my glycemia levels and a maternal history of diabetes, I feel committed to myself to change my eating habits and thus have a better quality of life.
Feliz tardes querida comunidad Hive, quiero compartir con ustedes estos deliciosos pero sobretodo nutritivo Sándwiches de berenjena, motivada a un aumento en mis niveles de glicemia y por antecedentes maternales de diabetes, me siento en el compromiso conmigo misma en cambiar mis hábitos de alimentación y así tener una mejor calidad de vida.
So I decided to include more vegetables in my diet by changing carbohydrates for vegetables and as part of this change I share with you this recipe ideal for a breakfast or dinner, I hope you like it.
Por lo que decidí incluir más vegetales en mi alimentación cambiando carbohidratos por vegetales y como parte de este cambio les comparto esta receta ideal para un desayuno o cena, espero les guste.
Ingredients:
- 1 large eggplant of approximately 400 gr.
- 2 tomatoes
- 1 onion
- Lettuce to taste
- 2 slices of ham (leg, turkey or chicken)
- Low-fat mozzarella cheese
- ½ cup corn flour
- For dressing I used onion, garlic, parsley and ground oregano.
- Salt to taste
Ingredientes:
• 1 berenjena grande de aproximadamente 400 gr
• 2 tomates
• 1 cebolla
• Lechuga al gusto
• 2 lonjas de jamón (de pierna, pavo o pollo)
• Queso mozzarella bajo en grasa
• ½ taza de harina de maíz
• Para aderezar usé cebolla, ajo, perejil y orégano molido.
• Sal al gusto.
Procedure:
- We remove the shell from the eggplant, cut in lengths of approximately 1 cm thick, place the eggplant slices in salted water for ten minutes to remove the acidity.
• Le quitamos la concha a la berenjena, cortamos en longas de aproximadamente 1 cm de grueso, colocamos las lonjas de berenjena en agua con sal por diez minutos para quitarle la acidez.
- Meanwhile we put the lettuce cut by hand in water with vinegar for 10 to 15 minutes along with the tomato and onion, then drain the lettuce, chop the tomato and onion into slices and set aside.
• Mientras ponemos la lechuga cortada a mano en agua con vinagre de 10 a 15 minutos junto con el tomate y la cebolla, luego escurrimos la lechuga, picamos el tomate y la cebolla en rodajas y reservamos.
- After this time we drain the eggplant slices, and proceed to mix the flour with the dressing and salt.
• Pasado el tiempo ponemos a escurrir las lonjas de berenjena, y procedemos a mezclar la harina con el aderezo y la sal.
- Then we bread our eggplant slices on both sides.
• Posteriormente empanizamos nuestras lonjas de berenjenas por ambos lados.
- We put them on a hot griddle to grill them for the necessary time, approximately 10 to 15 minutes on each side.
• Las ponemos en una plancha caliente para asarlas el tiempo necesario, aproximadamente de 10 a 15 minutos de cada lado.
- Once grilled, we begin to assemble our sandwiches, we place the lettuce, onion and tomato.
• Ya asadas, empezamos a armar nuestro sándwiches colocamos la lechuga, la cebolla y el tomate.
- Then add the mozzarella cheese and ham, cover with another slice of eggplant and take it back to the grill so that the heat allows the cheese to gratinate.
• Posteriormente el queso mozzarella y el jamón, tapamos con otra lonja de berenjena y llevamos nuevamente a la plancha para que el calor permita que el queso se gratine

That's a very good thing to do. Adding more fruits and vegetables to your diet will have long-term benefits! I hope you will share more recipes soon. I'm so amazed at how you made the eggplant as bread in your sandwich. hehehhe
