Pyttipannu

Sometimes the best dishes are created from leftovers. That is the case with this dish too. Pyttipannu is something I do almost every time I have some boiled potatoes from the day before, but it’s so good that I sometimes find myself making it from scratch too.

Pyttipannu is not traditionally the healthiest food. It’s made with potatoes, sausage and onions that are fried in hot oil and served with a fried egg on top. I wanted to add some freshness to my pyttipannu. I did that by adding some green bell peppers and chives, but you could really use your imagination here.

Ingredients for pyttipannu

9 medium size potatoes

pinch of chili flakes

1 tsp smoked paprika

½ tsp curry powder

½ tsp ground cumin

Salt and pepper to taste

½ onion

2 vegan chorizo sausages

½ green bell pepper

Chives

Boil your potatoes until cooked through. This should take about 20 minutes.

Chop the potatoes into small cubes and slice the onion and chorizo.

Fry the potatoes over medium to high heat with some oil and spices until they get some color. Set aside.

Fry the onions over medium heat until they are tender. Set aside.

Fry the chorizo pieces until they get some color. Add the bell pepper and potatoes. Fry for a few minutes and serve. Garnish the dish with some chopped chives and the fried onions.
