I've never enjoyed egg plants because it's always soggy and crushed up when cooked even for 10 mins.
But, you've added one whole egg here which is great as it gives it a bit of color and crunchiness, I guess.
I may just try it first with a small eggplant if I like the taste

Lol, yes the difference is the eggs mixed with the crumbled eggplants added with crushed garlic, I am sure you will like it too. Have you tried my Baba Ganoush ... it´s made of eggplants too . Here is therecipe. Thanks for visiting and for curating.
