Baked Eggplants with Lemon, Tomato and Mozzarella Cheese [ENG]-[ESP]

Eggplant is widely used in the kitchen, because of its versatility, it can be prepared in the oven, in stews or even fried. Eggplant has a pleasant flavor that is not invasive and combines very well with a great variety of seasoning and vegetables, but despite this, one of the things that people usually do not like about eggplant are the seeds, the color and its soft texture.

La berenjena es muy utilizada dentro en la cocina, por su versatilidad, puede ser preparada el horno, en guisos o incluso frita. La berenjena tiene un sabor agradable que no es invasivo y combina muy bien con gran variedad de condimento y vegetales, pero a pesar de esto, una de las cosas que a las personas no les suele gustar de la berenjena son las semillas, el color y su textura suave.

Thinking of preparing something different at home, I thought of baking some eggplants and stuffing them with tomato, mozzarella cheese and seasoning them with olive oil, lemon, oregano and pepper. The result of all this combination was incredible, to feel the acidity of the lemon, the sticky of the cheese, the texture of the tomato and the spices. Although I didn't add a lot of spices, these flavors create a roller coaster in your mouth and you end up enjoying a recipe that is extremely easy to prepare.

Pensando en preparar algo diferente en casa, se me ocurrió hornear unas berenjenas y rellenarlas con tomate, queso mozzarella y aderezar con aceite de oliva, limón, orégano y pimienta. El resultado de toda esta combinación fue increíble, sentir el acido del limón, lo pegajoso del queso, la textura del tomate y las especies. Pese a que no agregue gran cantidad de especies, estos sabores crean una montaña rusa en tu boca y terminas disfrutando de una receta que es sumamente fácil de preparar.

This recipe is very versatile, you can add more vegetable elements between the layers and the seasonings of your preference and you will still get a very nice result full of textures. An important detail is to use baby eggplants, since they do not usually have a large amount of seeds and end up being a different experience when it comes to eating. Esta receta es muy versátil, puedes agregar más elementos vegetales entre las capas y los condimentos de tu preferencia e igual obtendrás un resultado bastante agradable y cargado de texturas. Un detalle importante es utilizar berenjenas bebes, ya que no suelen tener gran cantidad de semillas y termina siendo una experiencia diferente a la hora de comer. Sin mas que agregas, es hora de preparar estas deliciosas berenjenas. Busca los ingredientes, prepara tu mesa de trabajo que ya vamos a cocinar.

Ingredients / Ingredientes

  • 4 eggplants
  • 200gr mozzarella cheese
  • 2 tomatoes
  • 5 tablespoons of olive oil
  • Juice of 1 lemon
  • Pepper and ground oregano.
  • Salt
  • 4 Berenjenas
  • 200gr de Queso mozzarella
  • 2 Tomate
  • 5 cucharadas de Aceite de oliva
  • Jugo de 1 limón
  • Pimienta y orégano molido.
  • Sal

Preparation / Preparación

  • We start preparing the dressing, in a bowl add the olive oil, lemon juice, oregano and salt. Mix very well so that everything is integrated as well as possible.
  • Chop the tomato into slices and set aside.
  • Comenzamos preparando el aderezo, en un bol agrega el aceite de oliva, el jugo de limón, el orégano y sal. Mezcla muy bien para que todo se integre lo mejor posible.
  • Picamos el tomate en rodajas y reservamos.
  • Take the eggplants and make several cuts lengthwise We must avoid piercing the eggplants. We should be left with channels where we will place the ingredients.
  • With the help of a brush, spread the oil and lemon mixture all over the eggplant. This will help to prevent oxidation and give it more flavor.
  • Agarramos las berenjenas y haremos varios cortes de manera longitudinal o a lo largo. Debemos evitar traspasar las berenjenas. Nos debe quedar como canales donde colocaremos los ingredientes.
  • Con ayuda de una brocha, unta toda la berenjena con la mezcla de aceite y limón. Esto va a ayudar a que no se oxide y tenga más sabor.
  • Add tomato in one channel and mozzarella cheese in another. Repeat the process until each of the channels are filled.
  • Once all the eggplants are filled, add more oil and lemon dressing and add salt and pepper on top to enhance the flavors a little more.
  • En un canal agregamos tomate y en otro queso mozzarella. Repetimos el proceso hasta llenar cada uno de los canales.
  • Una vez rellenada todas las berenjenas, agregamos mas aderezo de aceite y limón y agregamos sal y pimienta por encima para realzar un poco más los sabores.
  • Bake in a preheated oven at 180°C for 35 minutes or until they are well cooked and soft.
  • Serve them hot to enjoy the deliciousness of mozzarella cheese and how sticky it can be.
  • Llevamos a horno, precalentado a 180°C, por el espacio de 35min o hasta que estén bien cocidas y suaves.
  • Sírvelas calientes para que disfruten de lo delicioso del queso mozzarella y lo pegajoso que puede llegar a ser.
