Catfish Soup with Piper Guineense

Holla amigos! It's been a while here in this platform and I hope March started off great for you all. I thought to share my Catfish Soup recipe with you.

This is native dish from Eastern part of Nigeria. It is specifically made for important guests or when there's an occasion that requires native soup. It has it's own natural ingredients blended together to give it it's unique taste.

I used the following ingredients to achieve my desired spicey taste.

Catfish 3kg, 1 inch yam for thickening, seasoning cubes, crayfish, stock fish, dried fish, salt, hot peppers, onions, white soup spices and piper guineense leaves for that extra spicy flavor.

COOKING INSTRUCTIONS

STEP 1
Properly wash catfish to remove slime and blood. I used salt and hot water to achieve this.

STEP 2
Wash stock fish, dry fish and put in a cooking pot with catfish, add chopped onions and spices and cook for 10 minutes

STEP 3
Slice and wash yam needed to thicken soup, add to cook with fish, this add flavors to the yam and helps me save gas that would have been used to cook separately. Blend yam when cooked and set aside.

STEP 4
Wash and blend crayfish and pepper, add into the soup after removing yam.
Add blended yam and allow to cook for 15 minutes, this will help dissolve the yam and give it a thick consistency.

STEP 5
Wash African pepper leaves and add to the soup, stir and turn off heat after 1 minute.

And it is ready to be enjoyed, this meal is so healthy and helps with stomach problems.

That looks really yummy ! Although I'm a wimp and probably couldn't handle all the spices 😉

Something I noticed is that most of the Nigerian recipes I see published on Hive have shellfish and fish in, either as a main ingredient or as part of the stock. I'm curious - is that a regional thing, or something that is common in West Africa ?

So fish or other proteins like beef and goat meat is a major ingredient in our meals, we build flavors around those proteins together with other small fish like prawns or crayfish and other dried fresh water fish.

I'm always fascinated by how food around the world is so different. I think here, the main difference is that we use meat stock, herbs and spices to add flavour, but very rarely fish or shellfish. At least in modern times -the Romans used huge amounts of garum, which was made from rotted fish and sounds disgusting to modern tastes !

Well I guess the beauty lies in the difference, that's what makes us unique.

And I love to explore food so I don't think I would have difficulty surviving in any part of the world. The food has to look good though before I have a taste 😁
