The holiday season is in full swing here at Lily's Cottage, and it's the third year in a row that I say:
It's time to slow down, pack up, and scale down!
This year I'm saying it with more fervour. It's been crazy with families who have been high maintenance indeed, especially this past long weekend when I had no staff!
My neck issue has to be fixed but is put on ice till mid-January when I see a neuro-surgeon.
For now, the orthopedic said just go easy, as a nerve is being pinched by the C5/C6 discs, and the rotator cuff tear is a little worse for the wear.
I thought to myself, taking it easy is not going to happen! I can still drive, and do most things but have to avoid certain movements.
Both my staff members are on leave from Friday, so I have booked someone for the changeover days, except she's not available this Saturday!
Thankfully I've been spoilt by my son and his girlfriend who are visiting for two full weeks. She's a very good chef and has taken care of some of the meals.
Saturday however will see all hands on deck to get the cottage ready for a same-day booking!
I've been enjoying blueberries that are super affordable at the moment, so when it was my turn to do a light breakfast, the girlfriend mentioned Blueberry Crumpets - yep, that's super quick and easy, and a real treat for breakfast.
I do surprise some of our guests occasionally with crumpets, something they really appreciate!
Shall we get to the business of the day - cooking/baking?
Ingredients required
Mom Lily's Crumpets
Before we get to making crumpets, some of you may remember when I told you how Mom set up her little home industries selling jaffles, pies, and crumpets at a local factory. Mary used to push the little vending cart to the factory nearby, and Mom's delicious treats would be sold in no time. She used to 'sandwich' two crumpets together with cheese or jam. It was a hit with the factory workers.
Blueberry Crumpet Recipe
- 2 eggs
- 200ml Milk
- 30 gram Butter, melted
- 2ml Vanilla Essence
- 375ml Cake Flour
- 20ml Baking Powder
- 2ml Salt
- Approx 250ml Blueberries
Whisk eggs till frothy
Add sugar and vanilla and beat further
Sift dry ingredients and add to egg mixture alternately with milk and melted butter, mixing gently with a whisk
Carefully fold in blueberries
Place spoonsful into a pan on a medium heat using a thin layer of oil
Carefully turn when the batter forms bubbles, and cook the other side. Drain on paper towels
Serve with butter, jams, honey, and cheese.

Psst...I spoilt myself and bought an air fryer, am very happy with this 'gift' that's proving to be a time and energy saver, plus it bakes everything to perfection!
A big bonus is that I could happily start Hiving without worrying about the food getting burnt!

When I saw the title and the first photo, I thought, "well, this is a lazy breakfast... jam on the bread"... 😃 But, when I put my glasses on and continued reading, I realized that it had nothing to do with a lazy breakfast, but rather a delicious, home-made-tasty meal!!! Yummy!

I do hope that it can be resolved without surgery as I had a C6/7 disc fusion many moons ago, very successful though!
The crumpets were very good with Blueberries.
Airfryer - I was a skeptic but it bakes everything so quick; crispy on the outside, but still moist inside. And no wasting electricity using a large oven.

I kept some in the refrigerator and lightly toasted them the day after just to warm up, they were still good. I would love to try a vegan version using chia eggs, but wonder if it will be as fluffy?

They will be great with chia eggs. I have seen that some recipes, when veganized, taste much better. I only recommend that you grind the chia seeds before hydrating them, this allows for a better result, and that you do the hydration at most 30 minutes before preparing the crumpets, because otherwise the preparation will become a bit bitter.
Business is great as ever it keeps you busy and going easy or slowing down seems difficult to do but I hope your neck will get better. It's nice though that you got some extra pair of hands this holiday season.

I'm super thankful that the bnb is so busy and that my son and his girlfriend are here to lend a helping hand! Yep, not easy to slow down when one is used to being active.

Aside from the vanilla, those look an awful lot like little blueberry pancakes. Have "crumpets" just been pretentious flapjacks all along?
Hi @jacobtothe, it's quite confusing how words are used differently in various parts of the world.
To us in South Africa, pancakes are more like a crepe. It possibly stems from the Dutch influence - pannenkoeken. Crumpets and flapjacks are the same thing here.
Similarly my confusion when I learnt (learned) that what we call biscuits is cookies in the US, but scones are called biscuits in the US!

Biscuits (US) are less scone and more like what we call an "English muffin." Not sweet, very much more of a hearty bread nugget.
Thank you for clarifying that. I remember a Texan Hiver reviewing a steakhouse and saying they serve the best biscuits and gravy!
I was totally flummoxed.
Hearty biscuits with sausage gravy are definitely a popular item. I didn't care for diner versions even before discovering the dairy allergy. Leftover meat and gravy works well as a home-made way to deal with leftovers, though.
From the ancient family Betty Crocker cookbook:
Add a thick white sauce with lots of browned ground pork sausage mixed in and you'll be close. Caloric overload warning!

Thanks for the recipe, I showed it to my youngest daughter who loves to cook and she liked it a lot, the only thing is that here in Venezuela, in the city where I live you can't get Blueberries.
It's also delicious without the berries @lanzjoseg.

I think I'm the last of all my friends to get one. Can see why everyone's so excited when they first use it, everything bakes much quicker, crispier and saves electricity.

Looks like blue berries are easily available their. Here its difficult to get. And definitely the crumpets llook yummy. Hope the neck pain gets better so that you get busy with the lily's cottage.
It's been plentiful this year, the crumpets were delicious indeed!

It sounds like you've had quite the whirlwind of a holiday season so far.
I can only imagine how challenging it must be juggling everything, especially with your neck issue, I hope the neuro-surgeon can provide some relief in January.
