Hello everyone!
Welcome to another edition of my recipes. Today, I am sharing about a simple
dish that is a favorite in my household. We love bean sprouts, who wouldn´t love them, they are healthy. According to Healthline.com sprouts are richer in protein, folate, magnesium, phosphorus, manganese and vitamins C and K. Further, they’re rich in many nutrients. They’re also said to improve your digestion and blood sugar levels, and possibly even fend off heart disease.
As one favorite vegetable...
Whenever I go to the supermarket, I always look for fresh supply and this is one vegetable I always get. It is so versatile that it is not boring to have on the table. I can use it in salad, as fillings in Spring Rolls or simply make a stir-fried dish mixed with other veggies on hand. Just have a look at the end dish, does it not look delish?!
To shorten the cooking time, I prepare the ingredients beforehand. When all ingredients are ready, you are simply done with half the cooking time. The Sprouts and a couple of broccoli flowers (optional) have been blanched for about 2 minutes to get rid of any microorganism lurking in them. By means of blanching vegetables, it can take away bitterness as well as retains the vitamins as well as its color. For broccoli, when I steam the flowerets, I have a ready container with cold water and ice, the ice retains the green color of the broccoli.
Stir-Fry Bean Sprouts
Ingredients:
150 grams bean sprouts, blanched
button mushrooms/or champignons, sliced
2 cloves garlic, crushed and then chopped
1 medium red onion , peeled and sliced
2 stalks of spring onions including the leaves, cut
1 red bell pepper, diced
a pair or lettuce leaves, cut in strips
broccoli, steamed (optional)
olive oil
soy sauce
salt
ground black pepper
Preparations:
1... In a hot pan with 2 tablespoons olive oil, fry the garlic, followed by the onions.
2... Add the mushrooms, stir fry for about 2 minutes or until the mushrooms become soft, then add the bell pepper, the lettuce...stir-fry
3.Add the blanched bean sprouts, stirring carefullyh until all ingredients are mixed, then add the broccoli (optional). Sprinkle 1 teaspoon soy sauce, season with salt and pepper according to taste. Can be eaten as by-dish or simply as it is.

This looks like a lovely dish, I'd love to try it. I haven't eaten broccoli in far too long, the quality here in Suriname is not good and the prices are terrible.
I must admit though I was thinking there was gonna be a tomato hiding in this recipe somewhere ;).

Me too! But I will try the soya beans this time.. I have the mung beans still reserve, let´s see which one taste better.

Yes puede, pero the difference is that ang soya beans ay malalaki ang ulo and the stems are skinny... Ang mung beans naman manipis ang ulo but the stems are chunky,,,
