Last Sunday I cooked in the oven for my mom on her day a tasty whole chicken stuffed with chunks of meat and smoked chorizo, to celebrate Mother's Day.
This recipe is ideal for lunch or dinner and you can cook it for family and friends to share or for a particular celebration.

El pasado domingo cocine en el horno para mi mamá en su día un sabroso pollo entero relleno con trocitos de carne y chorizo ahumado, para celebrar el día de las madres.
Ésta receta es ideal para el almuerzo o la cena y pueden cocinarla para familiares y amigos para compartir o por alguna celebración en particular.
Ingredients:
- 1 whole chicken
- 250 gr. of steak meat
- 2 smoked sausages
- 4 cloves of garlic
- Salt
- Adobo
- Oregano
Ingredientes:
• 1 Pollo entero
• 250 gr. De carne de bistec
• 2 Chorizos ahumados
• 4 Dientes de Ajo
• Sal
• Adobo
• Orégano
Procedure:
We start the preparation by chopping the steak meat into small pieces for the stuffing.
Procedimiento:
Iniciamos la preparación del picando la carne de bistec en trocitos pequeños para el relleno.
Then we cut the smoked sausages in the same way.
Después cortamos los chorizos ahumados de igual manera.
In a bowl add the meat and chorizo that we previously cut.
En un recipiente añadimos la carne y chorizo que previamente cortamos.
Season with salt, adobo and oregano to taste.
Y sazonamos con sal, adobo y orégano al gusto.
Mix the meat and chorizo very well with the seasoning.
Mezclamos muy bien la carne y chorizo con los condimento.
We take the chicken, which is clean on the inside, without the entrails, and we stuff it with the pieces of meat and smoked chorizo sausage.
Tomamos el pollo que cabe destacar está limpio en su parte interna ósea que no posee sus vísceras, y rellenamos con los trocitos de carne y chorizo ahumado.
In a mortar and pestle add the 4 cloves of garlic, 1 teaspoon of salt, adobo and oregano.
En un mortero añadimos los 4 dientes de ajo, 1 cucharadita de sal, adobo y orégano.
We grind all these ingredients until we have a mixture as if it were a paste.
Trituramos todos estos ingredientes hasta que nos quede una mezcla como si fuera una pasta.
Add this garlic paste, oregano, salt and marinade to the surface of the chicken.
Añadimos está pasta de ajo, orégano, sal y adobo a la superficie del pollo.
Heat the oven to a temperature of 180C°, place the chicken in the oven preferably covered with aluminum foil or the lid of the pan you use.
Calentamos el horno a una temperatura de 180C°, colocamos el pollo al horno preferiblemente tapado ya sea con papel aluminio o la tapa de la paila que utilicen.
Let the chicken cook for 2 hours in the oven, if you want it more roasted like mine you should let it cook for 3 hours.
Dejamos cocinar durante 2 horas el pollo en el horno, si lo quieren más rostizado como el mío deben dejarlo 3 horas.
This is what the chicken looks like once we take it out of the oven.
Así queda el pollo una vez que lo sacamos del horno.
Serve and wait until the family is complete to enjoy its delicious flavor on our palate.
Servimos y solo queda esperar que esté completa la familia para desgustar su delicioso sabor en nuestro paladar.

Will this recipe work on a spit roast? My concern is the middle would not get cooked enough. I'd like the fat from the sausage and meat to flavor the chicken.
I have always made this recipe in the oven and I have never tried to make it in a roaster, but I can tell you with certainty that the meat and the chorizo give a delicious flavor to the chicken and if you make it in the oven the center is well cooked.
