This is another simple recipe that anybody who haven’t cooked before can magically cook at home. We, Filipinos, have a lot of influence from other cultures in terms of how we cook. But when I made this baked mac and cheese, I realized that the Filipino style is at times the best way to go. I was browsing through a couple of foreign recipes of mac and cheese and concluded *My customers, niece and nephew, won’t be happy not seeing red spaghetti sauce in that hot mac and cheese. That’s when I decided I’ll make this into a Filipino style baked mac and cheese.
So if you’re not from the Philippines, the recipe below might blow your mind; this isn’t your ordinary baked mac and cheese

  • Now, it’s time to make the creamy and cheesy white sauce that will be on the topmost layer of the mac and cheese before it goes inside the oven. Grab another clean pan. In a medium high flame, melt the butter.

  • Once completely melted, add the all-purpose cream. Let it simmer while continually mixing the mixture. Add the evaporated milk. Mix again.

  • Slowly add the grated mozzarella and cheddar cheese, making sure that before adding another batch, the first are fully melted ending up with a smooth and milky mixture. Ensure there are no lumps leftover from the cheese.

  • Then add cheese, the more cheese the better! Other recipes will only need mozarella cheese but this one, I bought a mixed of cheddar and mozzarella grated cheese.

Hi there. I'm loving the recipes!
As a Brit, we're not big eaters of mac and cheese but I have to say, this does look rather delicious and I'll probably give it a go. When you said it needed to be 'Filipino style', I thought you were going to dump a litre of vinegar in it which would suit me. I love vinegar and it's hardly ever used in Thai dishes. Perhaps I ought to 'Thaify' it and drop in a bunch of birdseye chillies as I know the family would seriously turn their nose up at it if there's no spice!
One thing I noticed though, it's not a cheap meal, is it? I don't know about over there, but here, cheese, butter and all things dairy are dreadfully expensive. As for the calorie count....although full of everything I love :-)
Great post as always, superstar and I hope life is treating you well and your health is much improved.
Best wishes and take care always :-)

Hey there @nathen007! The vinegar made me laugh! 😂 If my nephew and niece weren't around and waiting for the baked mac, I'd probably experiment with vinegar! Maybe some other time hehe

I missed Thai food, it's been like 6 years since I last visited Thailand. I just love the idea how restaurant there claimed that certain dishes weren't spicy but when they served it, still burning hot!!!

Honestly? It's not cheap. This is the reason why I bought a mix of grated cheddar and mozarella cheese; it's more affordable than 100% mozarella cheese. Thankfully companies in PH now their market well and offers substitutes for those who couldn't afford the pricey ones.

This new year has brought so much hope and joy to me. I look forward to my continued healing so I can continue all the adventures I have on my list hehe

Thank you for the kind words! They're comforting and sparks motivation. You take care, too! :)

Ang pagbabalik ng chef hehe
