We had big culinary plans for New Year's Eve this past weekend. We had planned to visit my parents last Friday for an early evening NYE celebration. They were going to bake a honey-glazed ham and cook up some cheesy potatoes. We were going to bring stuffed mushrooms for an appetizer. All things seemed primed for a go until Hattie managed to get the stomach flu last Friday. Our New Year's Eve plans were smashed. So, what do to with all those mushrooms?
Why, a seared chicken, mushroom, and spinach feast, of course!
First up, I sliced up the mushrooms and set them aside in a bowl. I then created a sour cream-based sauce with the following ingredients and thew them all in a bowl:
- 1/2 cup of heavy cream
- 1/4 cup of sour cream
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
- 2 tablespoons of white wine vinegar
Once in, I whisked it into a fervor:
I then prepped the chicken cutlets. I seasoned both sides with salt and pepper:
Then threw two tablespoons of avocado oil in a pan, and then seared them five minutes per side on medium-high heat.
Once cooked through and Liza was satisfied I wasn't going to get her sick, I put the chicken aside:
Threw a bit more oil in the pan, and then added the sliced mushrooms:
Stirred for a few times on medium heat...then added the spinach:
Then put a cover on the pot for two minutes, stirring occasionally:
Rewhisked the sauce and poured it on top of the mushrooms and spinach:
I then added the chicken back into the pan to coat and warm:
To finally serve it on a bed of bow-tie pasta with a spot of salt and pepper. Yum!
Hey, it wasn't honey-glazed baked ham and cheesy potatoes, but it was delicious. I used to hate to cook when I was single; cooking something like the chicken was so overwhelming when I could just get something easy to eat from the store. Now I love the challenge and the outcomes. Even Hattie had a nibble!

Yeah, I'm a semi pro cook. 😁 I'm cooking for so long that I often know when something is delicious just by looking at the recipe and the ingredients. My wife can cook too but she likes it when I cook most times.
Very nice - I was a lazy bachelor for a long time and just ate prepped food most of the time. Very lazy (especially when there was beer to enjoy).
I've gotten better the past few years, but really enjoy our charcoal grill and the cast iron on the stove top.
