I will admit that when I see those apple peels going into the compost it makes me sad because there is where a lot of the vitamins are...and it makes such awesome apple powder if dried.
I was also looking at the gelatin and thinking "where is the flour" but I guess the gelatin adds all the structure.
Final thought. Gelatin isn't easy to find here. At least I wouldn't know where to find it. I was wondering how well ground chia seed would work as a gelatin replacement.
Might have to steal a recipe of yours again and see what I can do with it.

Hello my friend!
what a pleasure to see you again in my post, well I understand that you think it's a waste to throw away the Apple peel but I use it to make tea, so most of the time it's not wasted.
And as for the structure of the dessert, that is given not only by the gelatin but by using the electric mixer until the mixture is frothy.
And I really don't know if you can use chia seeds, it would be good to investigate.
