THE MOST DECADENT CHOCOLATE TRAY CAKE

I started baking when I fell pregnant with my first child and suddenly started nesting and baking and doing all the things my mom had always done when I was growing up.

One of my absolute favourite recipes is this Decadent Chocolate Tray Bake. It gets requested at birthdays and gatherings and is always the most delicious treat to celebrate special moments.

Here’s my moms recipe:

CAKE INGREDIENTS
2 cups Self Raising Flour
2 cups Sugar
Pinch salt
1 tspn Bicarbonate of soda
100ml melted Margerine
1 cup boiling Water
100ml Oil
125ml Cocoa Powder
2 Eggs
125ml Buttermilk

METHOD
Preheat oven to 180 degrees Celsius / 350 Fahrenheit
Sift flour, sugar, salt and bicarbonate soda into a large bowl.
In a jug heat margerine, cocoa, water and oil. (Microwave for 1 minute will do then mix well.)
Allow to cool.
Pour the cocoa mixture over the flour mixture and mix lightly.
In the same just used before, whisk the eggs and buttermilk together lightly.
Add to the mixture and fold it together lightly.
Pour the final mixture into a large greased oven proof dish and bake in the middle of the oven for 45 minutes. (I use a square casserole dish as shown)
Ice while just warm.

ICING INGREDIENTS
75ml melted Margerine
2 tbsps Cocoa
3 tbsps Buttermilk
1 tspn Vanilla Essence
1.5 cups Icing Sugar

METHOD
Mix margerine, cocoa, vanilla and buttermilk together.
Add the icing sugar and mix well.
Pour the icing over the warm cake and leave to set.

Serve the cake from the dish as it is too moist and gooey to remove from the dish.

We often serve it with vanilla ice cream or a dash or fresh whipped cream.

This cake is a winner every time so please let me know if you give it a try.

What other recipes do you like? I’m trying to decide what to post today and leaning towards a baking post again. Easy scones, easy baked apple pie, South African fruity Malva bake???

Well funnily enough, I used to cook-A LOT, which is why I worked in hospitality food and beverage for 30+ years, then I got tired of cooking and needed more time to do more important stuff and so eat really simply and prepare raw, fresh foods rather than cook so much these days, however, I am in my mum and dads home (mum died a few years ago) so every time I come up here I clean out one of her cupboards and this time it was her recipe books- all the way back to the 70's and so it has been a wonderful trip down birthday cake memory lane....AND I have photographed them all and when I get back to Melbourne, I am going to start uploading them in a series of categories (I think) and as I do, make a recipe from each but veganise and de sugar it for myself and then post the results with the modified recipe...I just hope I get time when I get back there as I'll be going back to work f/t....

Curious about the South African fruity Malva bake though....😃
