Hey, great project! I really hope, I can grow my own food one day. At the moment I'm living in a van, so it's not really possible yet, but I have a little mint plant already, that I try to keep alive ^^

You can start with small seedbeds. They do not take up much space.
It is not only about the space, but also about the climate in a car. At the few places, where there would be enough sunlight, it gets too hot during the day.
But I think I could try to cultivate some more herbs, like basil and parsley.
