I don't know how it always happens but each week i end up choosing 6 winners rather than 5. Maybe next time i will just say 6 before hand :) I have to say, i was pleasantly surprised with the transformations that you have made to some of your dishes! I wasn’t sure what to expect when I asked the question, or how you might interpret it. I think some people created some leftovers rather than made any, but that’s OK! This will be the last challenge for the Budget cooking season! It was short and sweet. Now that it is a new year I would like to shift gears to something more interesting and focused. If you are interested to know, the theme of the Season 3 of our cooking competitions will be Ayurvedic Cooking! Each week i will present you with a simple to make dish for you to copy. These dishes will all be Ayurvedic recipes that are very good for the body and mind, but also very tasty indeed! The three people who make the best looking dish will win a prize! Leftover cabbage roll soup
We are not really into having celebratory gatherings but my partner Marc's elderly parents are lonely and want to see us whenever possible. For them we get together. On New years day I made something that they will eat. Cabbage rolls are familiar to them. It's something that I can veganize without them turning up their noses. They are hard core meat, potatoes, cheese and bread eaters. They rarely eat much else. Marc's mother has made vegan cabbage rolls for us in the past and his parents like them. She usually uses a vegan mince which I am not fond of. It's a brand with a flavor that doesn't cut it for me. She also doesn't like much spice or seasoning.
I made them this year and invited them to our place. It can be a long process but for me the trick is to put the cabbage in the freezer ahead of time. When you use it the leaves are much more tender and easy to work with.

This new year the new theme is exciting. Food leftovers are delightful to cook since they allow you to change a mundane, ordinary dish into something completely new. In fact, some people purposely overcook food in order to make up for the lack of flavor in the next recipe.
Take, for example, a chicken carcass that you boil for soup on Monday, fried chicken legs on Tuesday, and a chicken and vegetable pie on Wednesday, using the remaining flesh from the bones from the previous day. The ability to store leftover chicken reduces the amount of time spent preparing meals in the future.

One pot vegan meal for 2-3
Hello Ecotrain friends, thank you 🙏 for last time. and happy new year to you all.today here is my recipe fusion of leftovers.
We are very concious about our food so we use leftovers if they are well preserved. We invited our friends for some indian veg food but for some reason they could not come. so for making food i had to reduce the amount which was already cooked and half prepared.so there are
1.5 cups cooked basmati rice.was ready
8 small pototoes, cooked
2 small grated carrots
4 broccoli tops
some 2 days old leftover bread from the fridge.

Leftover mashed potato croquettes
Yesterday we got a visit from friends that grow olives and are making their own olive oil and many other products out of it.
I especially like their lemon and chilli infused olive oil and I will use them in many recipes. This time I used lemon infused olive oil.
Ingredients
- 500 g of leftover mashed potato
- 200 g of fresh chard
- 1 teaspoon of vegetable salt (or two pinches of salt)
- 1 tablespoon of fresh parsley
- a pinch of black pepper
- a pinch of nutmeg
- 3 tablespoons of all-purpose flour
- 3 tablespoons of nutritional yeast
- 50 g of all purpose flour
- 50 ml of oat milk
- 80 g of breadcrumbs
- lemon infused olive oil in a spray

A second chance at food, let's create a delicious breakfast
Days ago I saw this initiative and I was really interested in doing it I was thinking 1000 ways of how to make a dish with what I had in the fridge I told my grandmother to make a stir fry, but days went by and well she was using up the food.
However today I woke up alone with my brother at my dad's house and I saw that there was some rice, meat, chicken, dad and guineo in the fridge and I decided to make a surprise breakfast for my brother giving food a second chance.
So today I decided to make a dish that a friend of mine had taught me, how to make a Spanish omelet with what's left in the fridge and here I bring you this recipe as a second chance for your food.

It usually have no leftovers but from time to time there is something left like the stems I then use for other stuff. I also almost produce no trash because I am an intelligent adult and I love myself and the planet.
