Flippit man the stress was on this year for Christmas. I'm having difficulty standing due to my sciatic nerve injury (nerve pain is f&#@ing unimaginably painful... Incase you didn't know). But I do have a secret weapon! Well three of them... they're like Christmas elves! But only when they feel like it and sometimes it feels like I'm herding cats! Sigh... Teenagers...
So, because of my compromised back, and to avoid spending another week on bedrest I at least ordered a ready-cooked gammon from my friend Desiree Frances Petersen who runs her own catering business. It was a very smart decision since this is the thing that takes me the most time. It was delivered this morning π₯°π₯°π₯°
I was up at 6 am to start MORE Christmas prepping! You can see the "joy" in my eyes in the photo π€£π€£
Then there was so much else to do that I couldn't sleep last night stressing about trifle and chicken. The trifle was supposed to go into the fridge last night already, but even after 8 hours of waiting and doing other stuff... Like going to see Christmas lights, it still wasn't set! It was a total dud.
@zakludick zipped off to pick and pay at 7am and helped me make jelly with ice blocks so it set super fast and I could build my trifle!
In the time it took for the jelly to set, I sorted out my chicken prep including stuffing and sticking it in the oven to begin the slow roast which is the hallmark of my fall-apart traditional roast chicken (recipe to follow).
The trifle turned out to be absolutely amazing and we generously had enough ingredients on hand to make three trifles, just the way I planned!! Although I may have been a bit heavy-handed with the Amarula π€«π€«ππ (recipe also to follow).
After all that stress (and stress eating Christmas cookies a few days ago that were meant for someone else after yelling at the childrenππ), I think we're going to have an awesome Christmas Eve after allπ₯°β€οΈ

I have 4 Pumpkin pies in progress and a pair of Banana loaf tomorrow, topped with a partridge in a pear flan. Keep the momentum going unless that knee is beginning to hurt. It great having the kids in the cooking and baking, they are skills that they will need and thankful to have in their later years.

oh absolutely!!! momentum is everything! But I also made sure I sat down as soon as I felt even a twinge of pain. I made such amazing food. Omg. I didn't think I would pull it off, but I did! And I'm not totally bedbound from pain! Yay! win for me!

Ooooh! Thank you! We accidentally grew butternut out of our compost last year!! hahaha. But I'll definitely give that a try. It's rare here, and I was always sort of skeptical about how it could possibly be delicious, but I worked in a restaurant that made an absolutely divine one. I am now converted and of course would like to make my own!
It was a big team effort!
