Some years ago, between November and February, I made a trip through Latin America and I visited some countries, including Argentina, Brazil and Colombia.
In December, while in Colombia, I stayed
with a Venezuelan family whose house was working as an Airbnb. This family was super nice with me and treated me like I was part of the family. I really felt like I was in home.
In Christmas eve they made a lot of food to celebrate this holiday, and although I don't remember all of the dishes, I remember 'Hallaca', 'Ensalada de gallina' and 'Pernil'.
I tried a bit of every dish, hesitating a little because I've never seen those plates, but when I tried the 'Pernil' it was different. It felt like something magical was happening.
I don't really know how it's made, but it is a baked pork leg with a delicious sauce that I really loved. I couldn't stop eating it and I couldn't eat anything else. I was really focused on that 'pernil', nothing else mattered at that moment. Lol.
I've never ate anything like that again and even though I tried to make it myself a couple times it wasn't the same. There's something in Venezuelan people that let them make magic with their hands while cooking.
Sadly I lost communication with my Venezuelan family, but I keep hoping to met them again someday. It really was one of the best Christmas in my life, even though I was far from home.

I tried the 'asado' too, really good food. That meat was special. Lol.

Indeed, hallaca, chicken salad, asado, baked chicken, and the majestic pernil are our Christmas meals.
