I would also go for completing a game that I only love playing, no point going for a shiny achievement on every game you play. At that point it will be just a chore.
And not gonna lie, I have skipped some games just because I thought the difficulty would be too high and playing it on easy won't be the same experience. But now I think, whether skipping the entire game just for that is fair?
I think it depends on the game, like, not every game is suitable for all of us, I like to find a balance where the game is challenging but it's not DESTROYING me, that way the difficultu curve feels fair and you don't frustrate over not progressing, you can't always find that sweet curve and it's where I decide if I try to keep playing or just drop the game, I did that with Ninja Gaiden 3 atm, man that game CRUSHED my soul.
You can always try, the important thing is that you're having fun, and sometimes you just need the right game on the right time, there are a lot of variables haha, there are games like Metal Gear Solid that I have to play on Medium or Easy because I'm BAD with stealth, but man, those are really good stories and I won't miss them just because of the difficulty y'know?
