I enjoyed MK II much more than the first one, even then though, it was more for my mom. I did get into Ultimate Mortal Kombat 3 and the one where they took on the DC universe. I really liked those two.
I can easily see why people enjoy Mortal Kombat II, I was just more a Street Fighter II fan at that time myself.
