Do you have any good Mexican places over there? That's probably what I would open. I mean if I were to over open something. Also, do they have a lot of Chinese restaurants over there? I would think they would, but then again, who knows. The funny thing is, even over here in the states you see a lot of the same menus, especially with Chinese, Mexican, and Bar & Grill style places. Every bar in town has the same five burgers, the same seven sandwiches and the same appetizers. It's the ones that elevate those dishes that really stand out.

We have Chinese food but it probably isn't what you are imagining Chinese food is. There is an American/Chinese guy that opened the American notion of Chinese food at one of his restaurants and it is really popular with the expats. I don't think very many of his customers are Vietnamese though and I think he is fine with that. The average Vietnamese person will not pay very much for a meal.
There are actually a lot more Mexican places here than you might imagine but I would say that none of them are very good. I like Tex-Mex though, not necessarily Mexican food so for all I know they could be doing it exactly right.... never been to Mexico.
I hear ya about the burgers. Some places at least try to be a bit different with their burgers but many of the places just opt for the hipster burgers that are so tall that you can't possibly fit them in your mouth. Who's that for?
Influencers.
I know what you mean about Tex Mex and southwestern food. The flavors are deeper and it just hits a bit differently. We used to go to this place down by my inlaws that billed itself as "New Mexican Cuisine". They still had burritos and stuff, but it was different and that made them stand out.
