  • Crispy noodles

At the local market near my home.

I saw an aunt selling food at her stall. All the food are made by herself and are local food. What I'm interested in is Tamarind chili paste and bitter green vegetable shoots. We can eat this vegetable only once a year during this time.

Boiled Azadirachta Excelsa shoots

Tamarind chili paste

It is a type of stir-fried chili paste. The main ingredient must definitely be tamarind. But the tamarind used to make chili paste must be only young tamarind to be delicious.

Tamarind chili paste is a popular Thai chili paste. It is well known to those who like to eat chili paste Equal to shrimp paste chili paste, mackerel chili paste, fermented fish chili paste Tamarind chili paste has a mellow taste. It has everything sour, sweet, oily, salty, and spicy, but it's not too spicy, so everyone can eat it.

As for the condiments and ingredients, it's not complicated. As for the method, it's easy to do. All you need is fresh young tamarind, pound it with chili, red onion, garlic, shrimp paste and stir fry. When stir frying, you can add pork, shrimp or not. It doesn't take long to make and you get tamarind chili paste to eat with vegetables. Guaranteed to have health benefits for sure. Can be stored for several days.

We can eat tamarind chili paste with many types of vegetables. This is the season for neem shoots that are popularly eaten with tamarind chili paste.

Neem shoots: You can eat the fresh neem shoots, but the Azadirachta Excelsa shoots are blanched and have a bitter taste. It is the top of a tree that has nutritional value and also has health benefits such as reducing fever and relieving headaches, reducing inflammation and relieving joint pain, treating dermatitis, helping strengthen the body's immune system, and helping reduce blood pressure.

Yummy!!

Another thing in this marker that I like to eat is crispy noodles. (Thai is called "Mi Krop")

Mi Krop are a Thai snack that has been eaten since ancient times. They are white rice noodles that are fried until crispy. Then mix it with a sauce that has a mellow sweet-sour taste. Eat it as a snack and it's really enjoyable.

This stall has a special recipe. He stir-fried crispy noodles for customers to see in front of the stall. The fragrant of the sauce attracts customers to stop by and buy. He sends out sample desserts for customers to try. They come in many flavors, such as tamarind flavor (orange) , pineapple flavor (yellow) , and okra flavor (pink). I buy tamarind and okra flavor.

Your food looks so good makes me want to go to thailand 😁 the tamarind paste looks appetizing

I guess this vegetable isn't normally grown in your area/country because you can only eat it once a year, or is there any other reason for that? So, people take the chance to eat this when it is in season. I think I have never tried tamarind chili paste. I am thinking it makes a good appetizer. Fried noodles are not common from where I come from. I guess it is interesting to try this if I have the chance.
